Blissful Protein Balls

As kids are getting older, all of us are mostly running around from one activity to another. Being a vegetarian, at times, it becomes a mission for me to make sure my kids have healthy bites going in their tummy to sustain them.

Otherwise, they get tired easily and have no energy to keep up with the sport which spells ‘HANGRY’ for me. Hungry + Angry = HANGRY. I often use this word when I feel they are getting super cranky for no reason and when I tell them if they are ‘hangry’ they start laughing and most of the times say ‘yes.’

One of my mission is to make sure to they do not get hangry between activities. For this, I turned to my sister-in-law, Palak, who is a vegan food blogger. She loves to create amazing recipes that are tasty and healthy.  Follow her on instagram, Palak Savani, for more recipes. I wanted to share this one recipe of hers – Chocolate Peanut Butter Protein Balls. This bliss balls are both vegan and gluten free.dd

Ingredients:

  • 2 cups rice cereal (preferably brown)
  • 1/4 cup peanuts, finely chopped
  • 1/2 cup peanut butter
  • 1/2 cup brown rice or maple syrup
  • 1 scoop protein powder (1 stuck to plain vanilla)
  • 1/2 tsp sea salt and more for sprinkling
  • 1/2 cup vegan chocolate chips
  • 2 tsp coconut oil
  • 1 to 2 tbsp water to help stick together if needed

Method:

  1. Combine brown rice cereal and 2 tablespoon of chopped peanuts in a large bowl.
  2. In a small pot, combine peanut butter and brown rice syrup/maple syrup and warm over low heat until it is runny and well-mixed. Turn off heat and mix in protein and salt.
  3. Coat a spatula with non-stick spray and pour peanut mixture into rice cereal mixture. Stir until all ingredients are combined. Feel free to use your hands.
  4. Once the mixtures have become well-incorporated, set it aside and let sit.
  5. In a separate pan, melt vegan chocolate chips with two teaspoon of coconut oil.
  6. Using a small ice-cream scoop, a spoon, or your hands, roll the dough place on parchment paper.
  7. Dip balls into chocolate or spread chocolate evenly over bars.
  8. Refrigerate until chocolate hardens.
  9. Enjoy two at a time for nearly 10 grams of protein.
  10. Store in an airtight container in the refrigerator for up to two weeks.

These were a big hit amongst my kids. It was hard for me to resist them too. They were perfect to go snacks that gave the right amount of energy to kids right before an activity. I am definitely going to be making more batches of this bliss balls.
