Superfood Acai to the Rescue

As moms, we are always scurrying to make yummy, yet creative, yet healthy yet quick recipes for our kids to make sure that get nutritious food in their tummy.

Well, I have such one recipe that does the job! It is a hit amongst my kids. They feel it is more of a treat then some healthy food they are having.

The Acai Bowl, has very few ingredients and very delicious even for us adults when at times we do not know what to eat. This is a recipe I learnt from my sister-in-law, Palak, who is a popular vegan food blogger. Check her out on insta @ palak.savani

Ingredients:

  1. 1 frozen acai berry packet (I get from Costco – Samabazon acai smoothie pack)
  2. 1 1/2 frozen banana
  3. 1/4 milk of choice (almond, soy)
  4. 1 tbsp maple syrup (optional)
  5. Toppings of your choice – granola, fruits

Recipe:

  1. Pour the acai berry packet, frozen banana, and 1/4 cup of milk (dairy free tastes better) in the Blendtec or a high-powered blender.
  2. Blend all the ingredients until completely smooth. Remember, by adding more or less milk, the consistency will depend on that. If more milk, it will be more liquidy and if less milk, it will be too thick. You want a medium consistency where it feels like acai bowl texture.
  3. I recommend using the tamper to help the mixture blend smoothly.
  4. Pour into a bowl and top it with any ingredients your kids like. (Granola and strawberry is their favorite!)

P.S. You can add protein powder to make it even more healthier, but I feel for kids, half a packet of the acai is more than enough to give them that energy.

Also, it takes less than 5 minutes to make it and you save some money when you buy it from outside!

There you go – it looks fancy, complicated, but it is one of the easiest, tastiest and simple recipe to keep under your sleeves. Let me know how it turns out!
