Healthy Mickey Waffles
Waffles…yummy in my tummy…that’s what kids are thinking when they hear the word waffles for breakfast.
I am sure as adults, even we cant resist them. I mean, who can? However, waffles are quite often looked upon as a very unhealthy breakfast.
My job is to turn that around and present it to my audience in a appealing way.
My kids love food, but they have quite picky taste buds. They do not like anything blend, rough tasting or anything that will come in their mouth while chewing. Yet, they have a big sweet tooth, especially my girls. They do not like spicy food, but they can have spicy cheetos so I am at loss when they refuse to have semi-spicy food.
So, while cooking I have to keep this in mind or it becomes a task to make them finish their food.
It was in November, when we were on the Disney Cruise where the kids had their first eggless mickey waffles and after that they have been reminding me every couple days to make mickey waffles.
Then came on the creative cap. I wanted to avoid using Bisquick Pancake Mix because it is enriched and refined flour which according to me is quite unhealthy. After searching quite a few options for pancake flour, I landed upon the Multigrain Flour from Trader Joes. (It consists of barley, wheat, rolled oats, yellow cornmeal and wheat bran). I also make oats flour at home. But my biggest worry was the mickey shape.
TA-DA! Amazon is a life saver. I ordered the Disney DCM-9 Mickey Mini Waffle Maker. It makes one at a time, but I wanted to test it out to make sure that it works.
Now, the time has come to make waffles. For my three kids, I take 5 spoons of the multigrain flour with 5 spoons of the oats flour. I add a cup of milk and mix it. It should be a medium consistency – not too thick or not too watery.
Simultaneously, you heat the waffle maker and once the red light comes on then you put a little bit of butter. Then you put the batter in, close the lid and wait for five minutes for it to cook.
Open it and it is all ready!
If this is not healthy enough, you can add your desired fruits and chopped nuts. I generally add strawberries, blueberries or whichever fruits I have at home at the time off. There is no right or wrong recipe, you can substitute the recipe with what you feel is comfortable for your family.
